Cibo Espresso’s vibrant Summer 2011/2012 menu has arrived!

This summer the fridges at Cibo Espresso will be rich with colour and fresh ingredients.

The nine new savoury menu items have been created by Cibo Espresso’s own Salvatore Pepe. Each product is very light, perfectly suited to the Australian summer heat.

A stand out product on this season’s menu for Salvatore is the Insalata Pollo. Char grilled chicken breast and sliced on a bed of snow pea shoots is accompanied by a gorgeous Sala Verde dressing abundant with fresh herbs and extra virgin olive oil. The Insalata Pollo is the perfect new addition to the Cibo salad offering.

Another of Salvatore’s favourites is the Caprese. A light ciabattina bread filled with fresh tomatoes, basil, fior di latte and cos lettuce. The creaminess of the fresh fior di latte mozzarella cheese compliments the other ingredients to create the perfect summer roll.

“I close my eyes and the Caprese takes me back to Italy. I wanted to create this experience for our Cibo Espresso customers,’ says Salvatore.

Claudio Ferraro has also been working hard to create a new range of desserts for the upcoming menu.

“The focus of this menu was to change look of our desserts by lifting the presentation. We have have continued to use traditional methods and flavours but have shifted our mindset toward new age style of decorating,” says Claudio.

This menu provides customers with more dessert options than ever before. Included in the 16 new sweet items on the menu, is the Coppetta Mirtilli, a cup of blueberry and cherry compote with custard and a thin layer of sponge.

The spectacular Delizia di Fragole encompasses everything there is to love in a great dessert.  The fresh strawberry mousse is layered with jaconde sponge and finishes with a raspberry jelly and fresh strawberries.
